Ratatouille

Olive oil

1 large onion, coarsely chopped

2 cloves garlic, minced

bullet

4 large zucchini, cut into chunks

1 medium eggplant, peeled and cut into chunks

1 large tomato, peeled, and quartered

3 large fingers pinch of herbs de provence

bullet

Oregano and salt to taste

1 small can tomato sauce

bullet

Fresh whole mushrooms (optional)

Cover bottom of Dutch oven with olive oil. Sauté onion for a few minutes. Add everything else and cook gently until done, about one hour. If you use mushrooms, put them in last so they don’t get mushy (I didn’t use them).

NOTE: Got this recipe from Aysha’s godmother years ago. She said to fix it early in the afternoon, let it sit, and then heat it up and the flavors are wonderful. She also sometimes serves it over pasta and it would be equally good over rice, I think. Although we normally just eat it plain!!! With a salad and bread it is a complete meal in itself!
