Russian Chicken

bullet2 cut up fryers
bullet1 jar apricot preserves
bullet1 bottle Russian dressing
bullet1 package Lipton Onion Soup Mix

Place chicken in baking dish. Mix other ingredients together; pour over chicken. Cover and bake 1-1 ½ hours at 350.

NOTE: This was from the Eustis Service League cookbook "Just a Dash of Eustis II" and I’ve had it since the 70s. It was a favorite of my children. I used to serve it over rice, as the sauce is wonderful. If you don’t care for Russian dressing, try it anyway. The taste is completely different! And if you are going to just use chicken breasts, use the bone-in ones. The recipe did not state to cover it, but I always did.
