Salad with Walnuts and Dried Cranberries

½ bag salad greens of choice

bullet

¼ cup walnuts, toasted and coarsely chopped

bullet

¼ cup dried cranberries

2 ounces reduced fat feta cheese

Balsamic Vinaigrette

Put greens, walnuts, cranberries, and feta into salad bowl. Toss with balsamic vinaigrette of choice.

NOTE: I found this in August 2001 Bon Appetit in an advertising section for Newman’s Own salad dressings. Aysha has said his balsamic vinaigrette is very good, although I just made my own with balsamic vinegar and olive oil. The recipe called for heating the feta cheese (it did NOT call for reduced fat but I had some and used it), but I did not. It also called for a head of leaf lettuce and a head of radicchio and one cup of the nuts and berries. I cut down on all of that, as I made it for us to go with the baked ziti, our two "experiments" today!
