Sautéed Zucchini
Heat the olive oil and butter in a large skillet over medium-high heat until the butter melts. Add the zucchini and sauté for 5-10 minutes or til it begins to brown, stirring frequently. Add the garlic, parsley, salt and pepper and blend well. Cook for 1 to 21 minutes or until the garlic becomes fragrant. Squeeze the lemon juice over the zucchini, if desired. NOTE: This, too, is from the Low Carb cookbook and has 6 grams of carbs per serving. I only used ¾ pounds of zucchini for us (2 small ones) but used the spices as stated. I did use the lemon juice. I served it with the Spicy Chicken and the Heirloom Tomato Salad. |
