Sea Bass with Artichokes, Zucchini and Tomatoes

bullet(1) 6 oz jar marinated artichoke hearts
bullet(2) 5-6 oz sea bass fillets
bullet8 oz. Plum tomatoes, chopped
bullet1 zucchini, cut into rounds
bullet3 Tbsp. chopped fresh basil
bullet2 garlic cloves, minced
bullet¾ cup clam juice

Preheat oven to 475 degrees. Drain marinade from artichokes into 9" diameter glass pie dish. Add fish; turn to coat with marinade. Sprinkle fish with salt and pepper. Scatter artichokes, tomatoes, zucchini, basil and garlic around fish. Pour clam juice over. Bake until fish is just opaque in center, about 20 minutes.

Serves 2.

I tossed everything in a bowl together and sat it in the fridge for a few hours until I was ready to cook it. I forgot about the clam juice (I was going to use chicken broth) and it turned out great. This was in the May ‘99 Bon Appetit in the 30 minutes or less section. We loved it!
