Shrimp Caesar Salad

24 large shrimp, peeled

2 teaspoons salt (I use rock salt)

2 teaspoons fresh thyme

bullet

1 teaspoon dried oregano

bullet

½ teaspoon cayenne pepper

bullet

1-teaspoon paprika

bullet

½ teaspoon black pepper

bullet

1-teaspoon fennel seeds, crushed

bullet

1 tablespoon EACH butter and olive oil

Caesar dressing of choice

bullet

4 slices bacon, cut up and cooked

Fresh grated Parmesan Cheese

bullet

1 bag Romaine

 

Mix the seasonings together in a small dish and set aside.

 

Put shrimp on plate and sprinkle seasonings over all shrimp.

 

Melt butter and olive oil in 10" skillet. Place shrimp, seasoned side down, in skillet. Sprinkle remaining spices over shrimp. Cook about 2 minutes per side, or until done.

 

Toss romaine with dressing and place on two plates. Put 12 shrimp on top of each salad, and then sprinkle with bacon and Parmesan cheese.

 

NOTE: We enjoy Caesar salad and I generally alternate it with marinated chicken breast or shrimp. Tonight I took the seasoning recipe from the Blackened Redfish recipe and did it with the shrimp. It is quite spicy and we really did like it. In the past, I’ve just used lemon pepper on the shrimp, and that is just as good. Occasionally I use the E Tu Caesar kit in the produce department at Publix. It has bacon bits and Parmesan cheese in it, which is when I started just fixing bacon to go on our Caesar salads. Other times I’ve used Ken’s Creamy Caesar Dressing and that seems to be Michael’s preference at this point!
