Norwood's Shrimp Creole

3 tablespoons butter

1 cup chopped onions

1/2 cup + 2 tablespoons chopped celery

1/2 cup chopped green bell peppers

bullet

3 cups diced fresh Roma tomatoes

bullet

1 1/2 cups canned tomato sauce

bullet

1 clove garlic, minced

bullet

1/2 teaspoon Tabasco

bullet

1/2 tablespoon Worcestershire sauce

bullet

1 lb fresh shrimp, peeled and deveined

 

Seasoning Mix:

1/2 teaspoon white pepper

bullet

1/8 teaspoon cayenne pepper

bullet

1/8 teaspoon black pepper

bullet

3/4 teaspoon thyme

bullet

1 whole bay leaf

bullet

1 teaspoon basil

 

Melt 1 1/2 tablespoons butter in pan and saute onions, green peppers, celery, garlic, and bay leaf for 2 minutes.

Add fresh tomatoes, tomato sauce, tabasco, worcestershire, and simmer for 15 minutes. Vegetables should be soft.

Add seasoning mix and simmer for 20 minutes more.

Sauté freshly peeled shrimp in remaining butter until pink and still tender. Toss with sauce and serve over scoop of rice or pasta.
