Shrimp Fra Diavolo

bullet

1 (8 ounce) package linguini

bullet

1 pound cooked and peeled shrimp

bullet

4 cloves crushed garlic

bullet

1 (14.5 ounce) can diced tomatoes

bullet

½ (28 ounce can) crushed tomatoes with garlic

bullet

1 teaspoon crushed red pepper

bullet

1 ounce red wine (optional)

Place tomatoes, crushed garlic, red pepper flakes, and wine ( I did use wine) in a 3-quart saucepan. Simmer over low heat for 30 minutes, stirring occasionally. Add shrimp last few minutes.

Cook linguini according to package directions. Toss with sauce and shrimp. Serve.

NOTE: We saw a dish with this name on the menu at Macaroni Grill and I came home and found a recipe listing the same ingredients on the Internet. The above is for half the given recipe. I could not find a 28-ounce can of tomatoes with garlic, but I could find a 14.5-ounce can of diced tomatoes with garlic, so I just used that. I also just used 4 ounces of linguini for us and it was fine.

The recipe said to cook the shrimp and put them in a bowl of cold water. Then when the linguini was ready, drain the shrimp in the bottom a colander, drain the linguini over the shrimp, toss them with some of the sauce, and serve the rest of the sauce on the side. That is NOT how I did it. I used the frozen cooked shrimp I get at Sams and just put it in the sauce the last few minutes, then tossed it with all the linguini.
