Shrimp Fresca From Taste of New York
| 1 pound fresh shrimp, peeled |
| 2 ripe whole tomatoes, chopped (I used 5 plum tomatoes) |
| 6 cloves fresh garlic, sliced |
| 1/2 cup olive oil(I used extra virgin) |
| 10 leaves fresh basil, chopped or whole (I minced mine) |
| salt, pepper, and red pepper to taste |
| 8 ounces linguine, cooked |
Heat oil in skillet, then add garlic and cook for a minute. When oil starts to sizzle, add shrimp and cook until shrimp are barely colored.
Add tomatoes, basil, and seasonings. Its done as soon as shrimp are cooked through.
Stir cooked pasta into shrimp mixture. Toss and serve.
