Shrimp Fresca From Taste of New York

 

bullet1 pound fresh shrimp, peeled
bullet2 ripe whole tomatoes, chopped (I used 5 plum tomatoes)
bullet6 cloves fresh garlic, sliced
bullet1/2 cup olive oil(I used extra virgin)
bullet10 leaves fresh basil, chopped or whole (I minced mine)
bulletsalt, pepper, and red pepper to taste
bullet8 ounces linguine, cooked

 

Heat oil in skillet, then add garlic and cook for a minute. When oil starts to sizzle, add shrimp and cook until shrimp are barely colored.

Add tomatoes, basil, and seasonings. Its done as soon as shrimp are cooked through.

Stir cooked pasta into shrimp mixture. Toss and serve.
