Shrimp Remoulade with Avocado and Hearts of Palm

6 tablespoons olive oil

1/4 cup chopped onion

1/4 cup Creole mustard (I found at Albertsons)

2 tablespoons tarragon vinegar

bullet

2 cloves garlic

bullet

1 teaspoon paprika

bullet

1/2 teaspoon salt

bullet

1/2 teaspoon cayenne pepper

1/4 cup + 2 tablespoons chopped green onions

1/2 10 oz bag mixed greens

bullet

1 lb large steamed shrimp, peeled

bullet

1/2 14 oz can hearts of palm, drained or artichoke hearts, halved

bullet

1 avocado, sliced

 

Combine first eight ingredients in food processor and blend well. Add green onions sand blend mixture until finely chopped. (Sauce can be made 2 days ahead; cover and refrigerate)

Put sauce in bowl and in middle of platter. Surround with lettuce. Top with shrimp, hearts of palm, and avocado.
