Shrimp Salad

1 pound cooked shrimp

1 cup diced celery

½ cup diced pineapple (I cut tidbits in half)

½ cup chopped pecans

½-3/4 cup mayo (calls for 1 ½ cups but this is plenty)

¾ teaspoon salt

bullet

¼ teaspoon white pepper

Juice of half lemon

Mix together shrimp, celery, pineapple, and pecans. Mix mayonnaise (I use light miracle whip), salt, pepper, and lemon juice. Mix all together, chill, and serve.

NOTE: This is the recipe from the Contemporary Hotel at WDW. Soon after it opened, the recipe was published in the Orlando Sentinel and I got it at that time. I cut the amount of mayonnaise, spices, and lemon in half, as it was just too soupy with so much mayo. The recipe calls for small shrimp, but I use the 26-30 count (and have Publix steam them for me) and just cut them in half. I’m not willing to shell that many small shrimp! I usually fix half the recipe for just the two of us and it is plenty!
