Shrimp with Basil-Garlic Butter

12 jumbo shrimp (3/4 lb)

1 1/2 tablespoons olive oil

2 teaspoons minced garlic

1/3 cup dry white wine

bullet

1 tablespoon fresh lemon juice

bullet

2 tablespoons chopped sun dried tomatoes packed in oil

6 tablespoons cold unsalted butter, cut into pieces

1/2 cup fresh shredded basil

 

Preheat oven to 350.

Season shrimp with salt and pepper. Heat oil in skillet until hot but not smoking and saute shrimp one minute per side. Transfer to baking dish and bake in middle of oven until done, about seven minutes.

While shrimp bake, add garlic to skillet and cook and stir for 15 seconds, then add wine, lemon juice and sun dried tomatoes. Boil, stirring occasionally, until liquid is reduced by two thirds. Swirl in butter and basil over low heat and season with salt and pepper.

Remove shrimp from oven and serve with sauce.

NOTE: I poured the sauce over the shrimp and just served it. It would be good over pasta or rice, too! Had a good flavor. Got the recipe from Gourmet magazine.
