Shrimp with Feta Cheese

1 lb. large shrimp, peeled and deveined

1 tablespoon butter

1 teaspoon lemon juice

1/2 onion, thinly sliced

2 tablespoons olive oil

bullet

1/2 cup dry white wine

bullet

1/2 cup chicken broth

bullet

1 clove garlic minced

bullet

4 plum tomatoes, chopped

bullet

2 teaspoons chopped fresh oregano

bullet

1 teaspoon chopped fresh basil

bullet

1 teaspoon chopped fresh parsley

bullet

4 oz. feta cheese, crumbled

 

 

Melt butter in large skillet over medium heat; add shrimp and lemon juice and sauté 3-4 minutes or until pink. Remove from skillet and cover.

Add oil to skillet and saute onion until tender, 1-2 minutes. Add wine, broth, and garlic. Reduce heat, and simmer 10 minutes. Add tomatoes and simmer 5 more minutes. Stir in shrimp and spices and simmer a minute or so. Put into bowl and sprinkle with feta cheese. Serve over hot cooked pasta.

NOTE: I found this in Southern Living, Sept. 2000. Where I used chicken broth it called for clam juice. I made a fish stew once and used clam juice and it was too "fishy" smelling and tasting to suit me, so I now always substitute chicken broth when it calls for clam juice. There is enough for two meals for Michael and me.

I served it over thin spaghetti because I had some in the pantry! J
