Shrimp with Feta Cheese
Melt butter in large skillet over medium heat; add shrimp and lemon juice and sauté 3-4 minutes or until pink. Remove from skillet and cover. Add oil to skillet and saute onion until tender, 1-2 minutes. Add wine, broth, and garlic. Reduce heat, and simmer 10 minutes. Add tomatoes and simmer 5 more minutes. Stir in shrimp and spices and simmer a minute or so. Put into bowl and sprinkle with feta cheese. Serve over hot cooked pasta. NOTE: I found this in Southern Living, Sept. 2000. Where I used chicken broth it called for clam juice. I made a fish stew once and used clam juice and it was too "fishy" smelling and tasting to suit me, so I now always substitute chicken broth when it calls for clam juice. There is enough for two meals for Michael and me. I served it over thin spaghetti because I had some in the pantry! J |
