Spicy Broiled Fish

2 fillets fish

salt

1/2 tablespoon old bay seasoning

1/2 tablespoon paprika

juice from 1/2 lemon

bullet

dried parsley flakes

bullet

butter

 

Put filets on foil lined sheet. Salt well, then cover with mixture of old bay and paprika. Sprinkle with parsley. Squeeze juice of half lemon over the filets and squeeze a small amount of butter over them. Broil 10-15 minutes.

NOTE: A friend gave us some pompano, so that is the fish I used for this recipe. I found it in my 1991 Southern Living Yearbook. I used squeeze butter on this and only used a small amount since I had been told Pompano was oily and didn't need any extra in it! It is nice and spicy, just the way we like it!
