Spinach Lasagna Rolls

1 tablespoon olive oil

1 (10 ounce) package leaf spinach, thawed, drained

1 (15 ounce) container ricotta cheese

1/2 cup grated Parmesan cheese

bullet

1 egg, beaten

bullet

1 tablespoon chopped Italian parsley

salt and pepper

2 cups spaghetti sauce

8 lasagna noodles, freshly cooked

1 1/4 cups grated mozzarella

 

Preheat oven to 350.

Heat oil in skillet over medium heat. Add spinach and cook until tender, about 4 minutes. Cool.

Combine spinach, ricotta, parmesan, egg, and parsley in large bowl. Season with salt and pepper.

Spread one cup of spaghetti sauce over bottom of casserole dish.

Set lasagna noodle on waxed paper sheet. Spread about 1/3 cup spinach mixture over noodle. Carefully roll up noodle. Arrange seam side down in prepared dish. Repeat with remaining noodles. Top with remaining one cup sauce. Sprinkle with mozzarella. Bake about 45 minutes.

NOTE: I made a tomato sauce using one large can of tomatoes which I pureed in the blender, one 6 ounce can of tomato paste, 3 cloves of minced garlic, one teaspoon each of salt, pepper, and oregano and a sprinkle of basil and italian seasoning. I simmered it about ten or fifteen minutes. You can also used purchased spaghetti sauce.
