Spinach Salad with Apples, Avocado, and Bacon

1/2 cup vegetable oil

2 tablespoons powdered sugar

2 tablespoons apple cider vinegar

1/2 tablespoon fresh lemon juice

bullet

3/4 teaspoon dry mustard

bullet

3/4 teaspoon paprika

bullet

1/4 teaspoon ground ginger

bullet

6 slices bacon, chopped

bullet

1/2 (10 ounce bag) fresh spinach

bullet

1 medium sized Red Delicious apple, cored and thinly sliced

Bunch of scallions, chopped (or thinly sliced red onion(

Avocado, peeled and cubed

Whisk oil, powdered sugar, vinegar, lemon juice, dry mustard, paprika, and ground ginger in small bowl to blend. Season to taste with salt and pepper.

Sauté chopped bacon slices until brown and crisp. Drain on paper towel. Combine spinach leaves, apple slices, onion, avocado, and bacon in large bowl. Toss with enough dressing to coat. Divide among plates and serve.

Top with grilled chicken breast for complete meal!

NOTE: This is in Dec. 2000 Bon Appetit. I gave the recipe for half the dressing, as it makes quite a bit. I did not use red onions. We don't like avocados, so I did not include them. Sounds great with them, tho! The flavors were quite good and I had marinated a chicken breast and grilled it to serve on top of the salad for dinner.
