Spinach Salad with Craisins, Blueberries, and Walnuts

bullet1/3 cup olive oil
bullet3 Tablespoons sugar
bullet2 Tablespoons white wine vinegar
bullet2 Tablespoons sour cream
bullet½ teaspoon ground mustard
bulletSpinach
bulletWalnuts, chopped and toasted
bulletHandful of craisins and dried blueberries

In a jar with a tight fitting lid, combine the oil, sugar, vinegar, sour cream, and mustard. Shake well. Divide spinach among four salad plates. Drizzle with dressing and top with walnuts and dried fruit.

NOTE: This is in the December/January 2006 issue of TASTE OF HOME. I mixed the dressing in my small Cuisinart. I used splenda rather than sugar and light sour cream. It seems sweet to me, but my husband loved it. The recipe did not call for dried blueberries, but I have some so I threw them in with the craisins. We thoroughly enjoyed the salad!
