Sun-Dried Tomato Fettuccine

1/2 cup dry-pack sun-dried tomatoes

1/4 cup olive oil

bullet

2 garlic cloves, minced

bullet

1/4 teaspoon dried crushed red pepper

4 ounces cooked and drained fettuccine

bullet

1/2 cup freshly grated parmesan

bullet

1/4 cup toasted pine nuts

Place sun-dried tomatoes in small bowl. Add enough boiling water to just cover tomatoes. Let stand until tomatoes are soft, about one minute. Drain and coarsely chop tomatoes.

Heat olive oil in skillet. Add sun-dried tomatoes, garlic, and red pepper. Sauté until garlic is just golden, about 3 minutes. Transfer to large bowl.

Add fettuccine and 1/2 cup parmesan to bowl. Toss well. Sprinkle with pine nuts.

NOTE: Found this on the internet in a 1992 Bon Appetit. This is one half the recipe, which was plenty for us with a salad and bead. The tomatoes were a little chewy, so next time I'll probably let them sit in the water 3-4 minutes.
