Vegetable Frittata

2 tablespoons milk

Salt and Pepper

Grated Cheddar Cheese

6 slices bacon, sliced into small pieces and cooked and drained.

 

Mix the eggs and milk with the salt and pepper and set aside.

 

Chop up a small amount of any vegetables you might have. The ones I listed are ones I usually have and use. Sauté the vegetables in the butter until crisp tender. Pour the eggs over the vegetables (I use a 10" calphalon skillet). Put skillet into pre-heated 400-degree oven for 7 minutes. Remove and top with grated cheddar cheese. Bake another 2 minutes. Cut in half, put half on each plate and top with the bacon pieces.

 

NOTE: Very often on Sunday night we have this, an omelet of some sort, or just plain scrambled eggs. Before we started going low carb, we would also have toast and jelly and orange juice. Now, however, we just have a small amount of fresh fruit with it, usually blueberries and strawberries; as that is what I keep cut up for cereal in the mornings!
