Apple Cranberry Salad

bullet½ package romaine or greens of choice
bullet½ Granny Smith apple, sliced and diced
bulletSweetened dried cranberries
bulletWalnut pieces, toasted
bullet2 sliced green onions
bullet2 TBLS olive oil
bullet2 TBLS Balsamic Raspberry Vinegar

Toss greens, apple, cranberries, walnuts, and scallions together.

Whisk together olive oil and vinegar and season with salt and pepper.

Toss salad with dressing and serve.

NOTE: I got this off the Kraft foods site. It said to serve it with Kraft Light Done Right Raspberry Vinaigrette Reduced Fat Dressing. I also adjusted the amounts of the ingredients, as it was just for the two of us. It called for one 10 oz. package of lettuce, 2 apples, 1 cup of walnuts, 1 cup of dried cranberries and ½ cup of sliced scallions to serve 8-10.
