Cherry Waldorf Salad

1 large apple, chopped

1 tablespoon lemon juice

1 celery rib, chopped (optional)

1 cup Bing cherries, pitted and halved

½ cup dried cranberries

bullet

½ cup slivered almonds, toasted

¼ cup mayonnaise

bullet

¼ cup sour cream

bullet

2 tablespoons honey

bullet

1/8-teaspoon salt

In a large salad bowl, toss the apples with the lemon juice. Add the celery, cherries, cranberries, and almonds.

In a small bowl, whisk the mayo, sour cream, honey, and salt until well blended. Pour over the salad and toss to coat. Cover and refrigerate for an hour before serving to get very cold.

NOTE: This is in the August/September 2003 Taste of Home magazine. It called for two apples, but I used one large Granny Smith, as I prefer tart apples. I also used light Miracle Whip and Reduced Fat Sour Cream. I have a "cherry pitter" (its under "My Favorites" on the site), which I use for Bing Cherries and it is so simple to do them! Michael considered it "dessert." It said it yields 6-8 servings. Also: the first time I made it I did add the celery. Second time I used two apples and eliminated the celery and we liked it better with just the fruit and nuts.
