Cranberry-Pineapple Mini Jell-O Cups

1 (20 ounce) can crushed pineapple, drained, juice reserved

2 (3 ounce) packages raspberry Jell-O

1 (16 ounce) can whole berry cranberry sauce

2/3 cup walnut pieces

bullet

1 apple, chopped

Drain pineapple, reserving juice. Add water to juice to measure 2 ½ cups; put in microwave and bring to a boil.

Add to gelatin mixes in a large bowl. Stir 2 minutes until completely dissolved. Stir in pineapple, cranberry sauce, nuts, and apples. Spoon into 24 paper lined cup cake tins. Refrigerate 2 ½ hours until firm. Remove from cupcake papers and serve.

NOTE: This is in the Kraft Foods Holiday cookbook for winter 2008-09. It was very easy and has a really good flavor. It is easy to do ahead and then transport in Tupperware or place on a decorative platter to serve.
