Fried Ice Cream

½ cup brown sugar, packed

1 cup finely chopped pecans

½ cup oatmeal

bullet

2 sticks butter

2 cups flour

bullet

1 jar caramel ice cream syrup

bullet

½ gallon vanilla ice cream

Mix first four ingredients together with an electric mixer. Add flour (I sifted, but it did not say to do so) next and mix all together until crumbly. Place mixture on a jelly roll pan and press down slightly to spread evenly. Bake at 400 for 15 minutes.

Remove from oven. Take half and crumble into the bottom of a buttered 9 x 13 pan. Drizzle half the jar of caramel syrup over the crust. Top with softened vanilla ice cream. Drizzle the remaining half of the caramel syrup over the ice cream and top with the rest of the crumbled crust.

Return to freezer and serve when frozen.

NOTE: My brother sent me this recipe. It was served at his office party and was a big hit there. He knows how I enjoy cooking so shared it with me. It was easy to do and is a good and nice dessert to serve.
