Grilled Shrimp

 

bullet¼ teaspoon garlic powder
bullet3 TBSP chopped parsley
bullet½ teaspoon pepper
bullet2 TBSP onion, chopped
bullet½ cup lemon juice
bullet½ teaspoon salt
bullet¼ cup oil
bullet¼ cup soy sauce
bullet2 lbs. shrimp, peeled, deveined

Mix the first six ingredients together in a shallow dish. Place shrimp in marinade and cover and refrigerate 2-3 hours or overnight. Grill on skewers 3-4 minutes per side or under the broiler. Serve.

NOTE: I used to fix this for my children when they were little and they loved it. I had completely forgotten about it until I was in Atlanta recently and my daughter fixed it for her three year old! She did it on her gas grill (as I used to) and put five shrimp on two wooden skewers for him. He loved them! Ate both skewers along with his roasted broccoli and left over French fries! I have no idea where I got the recipe, but it was back in the ‘80s somewhere!
