Onion with Bullion Cube and Butter

 

bullet1 medium onion, peeled and partially hollowed
bullet1 beef bullion cube
bullet1TBSP butter

Put the butter in a microwave dish. Put the bullion cube down inside it and top with the butter. Cover tightly with some sort of Glad or Saran wrap.

Microwave for 8 minutes and serve.

NOTE: My daughter had this at her father-in-laws house and they loved it, as did we. And so simple to fix! I just did one onion for us, medium sized, and cut it in half after it cooked. It was wonderful!!!!! Apparently this is from Southern Living, but I don’t know which issue. Her father-in-law has fixed up to four small ones, uses just half a bullion cube in small ones and smaller amount of butter, but still microwaves them for eight minutes and they are done and wonderful. We do vegetable meals, so I did this with the Tomato and Zucchini Pie and a pear and cheese salad. My daughter fixed it with grilled ribs, ramen coleslaw, and grilled vegetables.
