Piccadilly Pub Hot Brown

bullet

1-tablespoon butter, melted

bullet

2 tablespoons flour

bullet

1-cup milk

bullet

1/8-teaspoon salt

bullet

½ teaspoon dry mustard

bullet

½ tablespoon Worcestershire sauce

bullet

½ cup shredded cheddar cheese

bullet

2-3 pieces of bacon per piece of bread, cooked

bullet

Several slices of cooked turkey breast

bullet

2-4 pieces of toast

bullet

Tomato slices

bullet

Parmesan cheese, freshly grated

bullet

Paprika

Toast 2-4 pieces of bread and put on a rimmed baking pan.

Cook 2-3 slices bacon per piece of bread. Either just cook the bacon, or slice it up and cook it. Reserve bacon.

Slice a tomato so you’ll have 2-3 slices per piece of bread. Salt and pepper slices.

Melt one-tablespoon butter in 10" skillet. Add two tablespoons flour and stir to make a paste. Slowly add milk and stir until thickened. Add salt; dry mustard, Worcestershire, and cheese. Heat together completely.

Place toast on rimmed pan. Top with slices of turkey breast and cover with cheese sauce. Place whole or diced bacon over sauce. Place tomatoes over bacon, then top with Parmesan cheese and paprika. Broil and serve.

NOTE: This recipe is from the Piccadilly Pub in Naples, which no longer exists. I got the recipe from a friend at tennis. It is a little different from the other Hot Brown recipe on the site, which came from Southern Living. The portions above are half of the given recipe. It will easily do four pieces of toast, altho I just fixed one for each of us. I also found cooked portions of turkey breasts at Sams (sun dried tomato and cracked pepper; I bought the sun dried tomato) and used them. The one I used tasted smoked and I’ll use some of it later in the week and fix a South Western Salad with it. I did dice my bacon and just sprinkle it over the sauce and covered it with the tomatoes so it wouldn’t be too crisp. I just served this with a Five Cup Salad.
