Pineapple Coleslaw
In a large bowl combine the first four ingredients. Add mayo and toss to coat. Cover and refrigerate until serving. NOTE: This was in the April/May 2006 TASTE OF HOME. It also called for 3 radishes, but I did not choose to use them. I bought the shredded angel hair slaw at Publix and just chopped up some baby carrots. I measured out one-third cup mayo but did not use all of it and it was moist enough. I served it with the Swiss Tuna Melts, also in this issue of that magazine. |
