Tuna Salad II

bullet1 can (8 ounces) unsweetened crushed pineapple, drained
bullet1 can (6 ounces) tuna, drained
bullet½ large apple, chopped
bullet½ cup sliced celery
bullet½ cup golden raisins
bullet¼ cup sliced almonds, toasted
bullet½ cup mayonnaise
bullet½ TBSP lemon juice

In a large bowl, combine pineapple, tuna, apple, celery, raisins, and almonds.

Combine mayo and lemon juice and stir well. Stir into tuna mixture.

Serve as sandwiches or on lettuce.

NOTE: This is from September/October 2007 TASTE OF HOME. It is half the published recipe and is plenty for two people to have as a salad plate. I did combine my mayo and lemon juice in a separate bowl, and then just stirred in enough to moisten it. I do NOT care for soggy tuna salad. And I did not use all of it. This won third prize in a recipe contest for the magazine.
