Baked Honeycrisp Apples

2 Honeycrisp apples

¼ cup brown sugar

1 teaspoon ground cinnamon

2 TBSP dried cranberries

2 TBSP chopped walnuts

1 TBSP butter

Preheat oven to 400.

Slice off top of apples and scoop out cores (I used a grapefruit spoon), leaving a well in the center. In a small bowl, mix brown sugar, cinnamon, cranberries, and walnuts until blended. Stuff each apple with half the mixture. Place in a deep baking dish, topping each with 1 TBSP butter and a sprinkle of cinnamon. Fill bottom of pan with water and bake for 50-60 minutes, until apples are tender. Serve alone or with vanilla ice cream or caramel sauce.

NOTE: I found this recipe in a magazine I was sent by The Fresh Market. It is half the given recipe, and per my weight watchers recipe builder, each of the two servings is worth 8 points. I cut one in half for us to share and it is excellent! I’m saving the other one for later. I didn’t have any ice cream or caramel sauce, as was suggested in the recipe; but it is great on its own. It was also my first venture with Honeycrisp apples, but it won’t be my last.
