Breakfast Casserole

1 package (12 ounces) Johnsonville Breakfast Sausage Links (or your choice)

6 English muffins, cut into 1" cubes

¼ cup butter, melted

1 cup (4 ounces) shredded cheddar cheese

bullet

1 cup (4 ounces) shredded mozzarella cheese

½ cup chopped onion

bullet

½ cup chopped red pepper

bullet

12 eggs

bullet

2 cups milk

bullet

½ teaspoon EACH salt and pepper

¼ cup bacon bits

Cook sausage according to package directions. Cool slightly and cut into ¼" pieces. Place English muffin cubes in a greased 13 x 9 baking dish; drizzle with butter. Layer with sausage, cheese, onion, and the red peppers.

In a large bowl, combine the eggs, milk, salt, and pepper. Pour over cheese. Sprinkle with bacon. Cover and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking. Uncover and bake at 350 for 45-60 minutes or until a knife inserted into the center comes out clean. Let stand 5 minutes. Makes 12 servings.

NOTE: My cousin’s husband fixed this for us at our cousins’ reunion this summer. They have it every Easter with the family. It was VERY good, however, after 45 minutes it wasn’t done and we had to put it back into the oven. Hence the 45-60 minutes notation. I think it’ll be closer to 60 minutes.
