Maque Choux II

1 medium sweet onion, chopped

1 green pepper, chopped

1 garlic clove, minced

bullet

1 jalapeno pepper, minced

2 TBSP canola oil

bullet

4 cups fresh corn kernels (8 ears)

2 tomatoes, chopped

bullet

2 teaspoons Creole seasoning

Sauté onion, bell pepper, garlic, and jalapeno in hot oil in 3 qt skillet over medium-high heat about 8-10 minutes. Stir in corn and tomatoes and seasoning. Reduce heat to low, cover, and cook 10 minutes, stirring occasionally.

NOTE: I found this in August 2009 Southern Living. I already have a Maque Choux recipe (elsewhere on this site) which I love. However, I’m doing weight watchers now and the other recipe is made using 4 pieces of bacon vs 2 TBSP Canola oil in this one. Both recipes are really good. To me, the one with the bacon (at 5 points per one cup serving) has more flavor than this one (at 3 points per one cup serving). However, this one IS good and it is the one I’ll be fixing for us in the near future. I fixed this with green beans and almonds and a salad, as a vegetable lunch for us since we were going out to dinner tonight.
