Shrimp Fra Diavolo II

¼ cup drained sun-dried tomatoes in oil, chopped

2 cloves garlic, minced

bullet

¼- to ½ teaspoons crushed red pepper

8 ounces whole wheat spaghetti, cooked and drained

bullet

1 (28 ounce) can crushed tomatoes

1 lb shrimp, cleaned

1 cup chopped fresh basil

In 3 ½ qt. pot, sauté sun dried tomatoes, garlic, and red pepper until garlic is fragrant (about a minute). Add crushed tomatoes and simmer about 5 minutes to blend flavors. Add shrimp and cook 2-3 minutes. Add cooked spaghetti and fresh basil and stir together well. Serve.

NOTE: This is in Good Housekeeping magazine from January 2008. It is similar to the other recipe on my site for the same dish, which I had found online. Both are good, but we really enjoyed the sun dried tomatoes in this one. It was VERY easy to do and easy to have all ingredients on hand. If you do weight watchers, I put it into my ‘recipe builder’ and this recipe, serving four, is 8 points per serving. I did fix my husband some Texas Toast to go with his and we both had a fruit salad also.
