Spicy Spinach Artichoke Dip

½ cup butter

1 medium onion chopped

14 ounce can artichoke hearts, chopped

2 (10 ounce) packages of spinach, thawed and drained

8 ounces cream cheese

bullet

8 ounces sour cream

bullet

2 TBSP Tabasco sauce

bullet

¾ cup Monterey Jack Cheese

bullet

¾ cup Parmesan cheese

bullet

Salt and pepper to taste

Preheat oven to 350.

Melt butter in skillet.

Ad onion and cook until tender.

Add artichokes and spinach, cream cheese, sour cream, Tabasco, salt and pepper and both cheeses.

Cook until heated through.

Pour into ½ quart casserole dish. Place in oven until cheese is melted and slightly brown.

Serve with chips.

NOTE: I got this from a friend on my tennis team. She served it at a gathering at her house, and it is truly the best spinach and artichoke dip I’ve ever tasted. Nice and spicy but not overly so! Just plain GOOD!
